Yes, we love barbecued meat but as chefs and pit masters, we can't quench our curiousity when it comes to trying new foods. And yes, sometimes that leads us down the road less traveled: vegetarian barbecue. And you know what they say about the road less traveled... that it's good...or something like that - we were never great at poetry in school. However, we know barbecue and you need try try this Mediterranean-inspired Vegetarian Beet Burger Recipe.

Vegetarian Beet Burger Recipe

Serves: 6 | Prep. Time: 20 mins. |  Cook Time: 10 mins.

Ingredients for the Filling:

  • 4 to 5 approx. 3 cups) beets, finely shredded
  • 1 small onion, finely shredded
  • 1 1/2 seasoned panko crumbs
  • 1 cup feta cheese, crumbled finely
  • 2 cloves black garlic
  • 2 tbsps. greek style vinaigrette dressing
  • 2 eggs
  • 1 tbsp. fresh oregano, minced
  • 6 hamburger buns
  • high temperature oil (peanut, coconut, avocado)

STEP 1: Wash your beets, then peel them along with your onions. Then, shred them up together in a food processor or use a peeler. 

STEP 2: Drain the liquid and place your shredded beets and onions in a large bow. Add the panko, feta, black garlic, dressing, eggs, and oregano. Then, mix it up,

STEP 3: Once mixed, set the vegetable mixture in the fridge to chill for 30 minutes. This allows the panko to soak up the liquid which will hold the burgers together better.

STEP 4: Preheat the grill to medium-high, around 450°F.

STEP 5: While you wait for that to heat up, use your burger press to form the patties. 

STEP 6: When the grill is up to temperature, oil the burgers on one side, and cook for 3 to 5 minutes over direct heat. If you decide to use a plancha or griddle, oil up their surface instead of the burgers.

STEP 7: Serve these burgers hot on a delicious bun with your preferred toppings.
