Barbecued Greek Chicken Souvlaki Skewers with Homemade Tzatziki Recipe | Recipe of the Month

Let's bring a little culture to your outdoor kitchen with this delicious Barbecued Greek Chicken Souvlaki Skewers with Homemade Tzatziki Recipe, perfect for those days when you're tired of the usual mashed potatoes or spaghetti. 

For this Recipe of the Month, we'll be breaking it into 3 parts: Chicken Soulvaki, Homemade Tzatziki, and lastly, putting them together to serve. Let's get started.

 

Chicken Soulvaki (8 Servings)

Ingredients:

Prep Directions:

STEP 1: First things first, start by cutting the chicken breasts into 1/2 inch squares and placing them in a large Ziploc bag.

 

STEP 2: Next, add the rest of the ingredients into the bag to marinade, especially the Prairie Smoke and Spice Sweet and Tangy Chicken and Rib Rub. Use your hands to mix everything up well. Zip that bag tight or if you're marinating in a bowl, cover it with plastic wrap, then put it in the fridge for at least 1 hour, but no longer than 4 hours. Feel free to move on to making the Tzatziki Sauce while you wait.

STEP 3: Once chicken has marinated for 60 mins or more, thread the chicken pieces onto the skewers. Pack the pieces semi-tight and give each of them a little squeeze, so that they are more or less the same size to cook evenly. Finally, place the Chicken Souvlaki Skewers onto your grill that's preheated to 350°F and cook for about 20 minutes, or until the internal temperature of the chicken has reached 165°F.

Tzatziki Sauce

Ingredients:

  • 1 Cucumber
  • 2 Garlic Cloves (minced)
  • ¼  Cup Extra Virgin Olive Oil
  • 2 Cups Plain Greek Yogurt
  • 2 Tbsp. of Red Wine Vinegar
  • Pinch of Salt

Prep Directions:

STEP 1: Grab your trusty food processor and pour the olive oil and garlic in. Mix the ingredients until they're nicely blended and then leave it in the processor for now.

STEP 2: Now, remove the skin and the seeds of the cucumber and season them with salt and pepper as you prefer. Next, grate them down.

STEP 3: Now, wrap the grated cucumber in paper towel and squeeze out the excess water.

STEP 4: In your food processor add the cucumber to the already blended garlic and olive oil. Also add the yogurt, red wine vinegar, and a pinch of salt. Mix the ingredients until they combine and Mighty Morph like the Power Rangers. 

Note: Store the tzatziki sauce in the fridge and serve the mix cold.

 

 

To Serve

Ingredients:

  • 8 Pitas
  • Olive Oil
  • 1–2 Tsps. Dried Oregano
  • 1 Tomato (diced)
  • 1 Red Onion (diced)
  • 2 Cups Romaine Lettuce (chopped)
  • Fried Potatoes (optional)

Prep Directions:

STEP 1: Let's prepare the pitas while the Chicken Souvlaki is cooking. Start by using a silicone brush to oil the pitas on one side and season with Greek Seasoning Mix, wait 2 minutes, or until the pitas begin to brown, and then sprinkle a little salt on each pita.

 

    

STEP 2: To serve the Chicken Souvlaki, get a pita and layer a medium coat of your homemade Tzatziki Sauce.

STEP 3: Next, place half a skewer (or more to your liking) on top and to one side, then add some chopped romaine lettuce, diced tomatoes, and diced red onion to your liking and enjoy!
