As France is now in the final four, we give special thanks to our barbecue friends at Broil King for allowing us to share this original recipe as our 2026 Grilling for Gold recipe tour goes through Europe, in this case France, during July.
Picture a grilled cheese but way better! Start with slices of grilled ham stacked between two thick cuts of toasted bread, then topped with grated gruyère cheese and a creamy béchamel sauce.
- Prep Time: 5 Minutes
- Cook Time: 20 Minutes
- Serves: As many people as you make sandwiches for.
INGREDIENTS:
- 2 slices of brioche bread
- 2-3 slices of ham
- 100 mL 35% cream
- 50 grams gruyère cheese
- 1 tablespoon grainy Dijon mustard
- 1 tablespoon butter
- 1 teaspoon flour
- Salt and pepper to taste

DIRECTIONS:
- Begin by making a béchamel sauce. Melt the butter in a small pan or pot and, using a whisk, mix flour into butter until smooth. Add 35% cream and bring to a simmer. If the sauce is too thick, add a little extra cream. Season sauce with salt and pepper to taste.
- Next, grill the ham and toast brioche slices on high heat.
- To assemble the sandwich, spread mustard evenly on one slice of brioche with grilled ham and top with a second slice of brioche. Place the sandwich on a baking tray and pour béchamel over top, finishing with grated gruyere.
- Bake in your BBQ on high heat for 5 to 10 minutes, or until the cheese begins to brown.
- Serve immediately.
