Double Ace’s Smashburger w/ Brander Fries

INGREDIENTS - Smashburger and Smash Juice

INGREDIENTS - Double Ace’s SECRET Burger Sauce

  • ¼ Cup Mayo
  • ¼ Cup Ketchup
  • ¼ Cup Spicy Brown Mustard
  • 2 Garlic Cloves (minced)
  • 5 Tbsp White Vinegar
  • ⅛ tsp Cayenne Pepper
  • ⅛ tsp Smoked Paprika
  • Kreiser Barbecue SPG+ (to taste)
  • Pinch of White Sugar

INGREDIENTS - Brander Fries

  • 1 bag of crinkle-cut Cut Fries (cooked to package / your likeness)
  • 1 Jar Favourite Nacho Sauce
  • 1 Cup Fresh Diced Tomatoes
  • 4 Green Onion Sprigs (finely cut)

DIRECTIONS - Burger Sauce

  1. Mix all ingredients for the burger sauce, and set aside in the fridge.

DIRECTIONS - Smashburger Juice and Burger  

  1. Melt the butter in a small bowl, then combine the butter with Worcestershire, WSauce, and Fish Sauce until incorporated, let sit to cool a bit.
  2. In another bowl with your ground beef, add Prairie Smoke and Spice Steak shake, and pour burger juice on top after it's cooled.
  3. Gently mix with your hands, until incorporated. DO NOT OVERWORK the meat mixture.
  4. Portion 4oz, and shape into balls, and place onto a tray.
  5. Set the tray in fridge for a minimum of 45mins up to 3hrs. (You want the meat super cold).
  6. Get your griddle to medium-high temp.
  7. Remove your burgers from the fridge or freezer.
  8. Place about 3 to 4 balls on the griddle, leaving room for them to be smashed down.
  9. After 30 seconds of searing, smash them all the way down until they can’t be smashed anymore, with a burger press.
  10. Leave them alone and let them cook for about 3 to 4 minutes, or when the edges start to turn brown.
  11. Flip them over and immediately place a slice of cheese on top of each patty. When the cheese melts, they’re ready, about 1 to 2 minutes longer.
  12. Build your burger with the toppings of your choice and Burger Sauce.

DIRECTIONS - Brander Fries  

  1. Cook fries according to package or desired doneness.
  2. Season with your favorite fry seasoning (Try Blues Hog Cajun Bayou or Back Eddy's Southwest Seasoning)
  3. Top with your favorite warmed-up nacho cheese.
  4. Add diced tomatoes and green onions.
  5. Enjoy

*Additional topping like Sour Cream, & Cowboy Candy (Jalapenos) always go well with great burgers.
