You'll be transported to a world of luxury with the grilled Coq Au Vin recipe. This is an excellent dish to prepare over the holidays. Coat the chicken with Blues Hog Truffle & Chop Seasoning and simmer with a creamy mushroom garlic sauce. Add a splash of Prosecco for a finishing touch. This bone-in chicken meal will quickly become a family favorite!

INGREDIENTS:
- 6-8 pieces Bone-In Chicken Drumsticks or Thighs
- Blues Hog Truffle & Chop Seasoning
- 6 Slices Bacon
- 2 Cups Prosecco (Dry Sparkling Champagne)
- 2 Cups Sliced Mushrooms
- 4 Cloves Minced Garlic
- 2 Small Sliced Shallots
- 2 Tbsp Parmesan Cheese
- 1 tsp Salt
- 1 tsp Pepper
- 1 Tbsp Roughly Chopped Parsley
- 1 1/2 Cup Cubed Potatoes
DIRECTIONS:
- First, preheat your pellet grill to 350 degrees.
- Next prepare the chicken for your grilled coq au vin recipe. Evenly coat all sides of the chicken with your favorite poultry rub.
- Put your chicken directly on the grill to get a smoke bath while you get the other ingredients ready.
- For this grilled coq au vin recipe, we are using my favourite bubbly - prosecco. Next prepare all the ingredients to sauté in your Dutch oven.
- Slice your bacon, cut all your veggies, and measure out everything else.
- Add your bacon and sauté for 5 minutes. Next add your shallots, mushrooms, and potatoes. Sauté until your mushrooms are slightly wilted. Next add your garlic, salt, pepper and parsley. Sauté for a few minutes, ensuring not to burn the garlic.
- The final stage of this grilled Coq Au Vin recipe is adding in your prosecco and parmesan cheese. Stir thoroughly and then sit your grilled chicken into the sauce.
- Cover your Dutch oven and braise/reduce for an hour or until your chicken is 175 degrees or over (fall off the bone).
- You will have a lovely braised reduced sauce so spread over some delicious pasta or rice as a lovely side dish. This is such a savoury dish your whole family will enjoy it.
