Mexican Roadside Chipotle Ribs

Mexican Roadside Chipotle Ribs

This recipe combines traditional chipotle flavour with American-style BBQ pork. The Masterbuilt Gravity Series 1150 Digital Charcoal Grill & Smoker infuses these ribs to an incredible flavour. This app enabled grill allows you to set and monitor temperature, view session graphing and check meat probes. The removable ash pan makes this grill smoker combo easy to clean, so you can spend more time enjoying your creations!

INGREDIENTS:

  • 1 tablespoon Black Pepper
  • 1/2 can Chipotles in Adobo Sauce
  • 5 each Dried California Chilis
  • 5 each Garlic Cloves
  • 2 tablespoons Mexican Oregano
  • 3 each Pickled Jalapeños
  • 1/2 tablespoon Salt
  • 1 slab spareribs

INSTRUCTIONS:

  1. Boil dried chilis with garlic cloves until the chilis get soft.
  2. Let this cool then blend with the rest of the ingredients.
  3. Place about 1/2c of the water used to boil in the blender to help make it a paste.
  4. Smoke ribs from about 2 hours at 300* with a non-sweet BBQ rub.
  5. Remove and wrap with some butter and half of the chipotle sauce.
  6. Place back on smoker for another hour.
  7. Remove from foil and put more sauce on the ribs and let it tack on which will take about 15 minutes.
