Hickory and Mesquite are on the stronger end of flavours when it comes to smoke. These have undertones of earthy, smokey, bacon-like flavours, these are great for ribs, brisket, pork shoulder, and wild game. Oak, apple, and pecan are more of a medium level of smoke flavour, not too smokey and bold but a great choice for in-between strong and light flavouring. The undertones of these are similar besides apple being a hint fruiter these all share likeness of earthy, sweet, and nutty tones, great for pork, poultry, fish, lamb, and baked goods. On the lighter side there are maple, alder and cherry. These commonly are used for veggies, cheese, seafood, ham, and duck. undertones to note on these are also sweeter, and subtle. Pro tip, competition blends and signature blends are great for beginners but don't be afraid to DIY.
