Smoky & Cheesy Refried Beans Recipe

Serves: 4  | Prep. Time: 30 minutes  |

Ingredients:

  • 2 x Teaspoons of Extra Virgin Olive Oil
  • 1/4 x Cup White Onion (finely chopped) 
  • 1 x Can Refried Beans
  • 1/4 x Cup Tex Mex Cheese
  • 1/2 x Teaspoon of Lime Juice
  • 2 x Teaspoons Prairie Smoke & Spice Ancho / Coffee Rub 
  • 2 x Tablespoons of Water (if needed to thin out the beans)

 

Directions:

STEP 1: In a saucepan add the olive oil over medium heat until it starts to shimmer.

STEP 2: Add the onions and Ancho/Coffee Rub, stirring occasionally until onions have softened and are starting to turn translucent and fragrant (3~6 minutes on average).

STEP 3: Add in the refried beans and the Tex-Mex cheese, stirring frequently until combined. Add water as needed to thin out to your liking. If you like it thick leave as is.

STEP 4: Remove from the heat and stir in with lime juice. 

STEP 5: Add salt and pepper to your liking. We suggest Kreiser Barbecue SPG+ for seasoning.
