A fresh and tangy coleslaw inspired by Kansas City spices with Blackberries.
- Serves: 12 People

INGREDIENTS
- 1 bundle sweet kale
- ½ head green cabbage
- 1 red, 1 yellow, and 1 orange bell pepper
- 1 sweet onion
- ½ lb blackberries (blackberry is a popular fruit in Kansas, but try substituting clementine, apple, or even banana)
- ½ lb unsalted cashews
- 1 cup mayo
- 1 tbsp. apple cider vinegar
- 2 tbsp. honey
- Broil King KC Spice Rub (to taste)
DIRECTIONS
- Shred kale, cabbage, peppers, and onion as thinly as possible
- Mix mayo, apple cider vinegar, honey, and KC spice (Dressing should be slightly too salty, and slightly too sour)
- Mix together all shredded ingredients, cashews, blackberries, and dressing
- Refrigerate for at least 10 minutes to let dressing break down cabbage and kale
