Smoked Beef Short Ribs Recipe
Serves: 4 | Prep. Time: 6+ hours
Ingredients:
- 1 rack beef short ribs (4 bone-in plate ribs)
- 1/4 cup mustard
- 2 tablespoons horseradish
- 1/2 cup BBQ rub
- 1/3 cup apple cider vinegar
- 1/3 cup water
- 2 cups beef broth
- 1 white onion, sliced
- 4 cloves garlic, smashed
Directions:
STEP 1: Prepare the Smoker: Set up your Kamado Joe or pellet smoker grill for smoking at 250˚F.
STEP 2: Prepare the Ribs: Remove the fat and silver skin from the beef ribs and score the membrane on the back. Mix the mustard and horseradish, then apply to both sides of the ribs. Apply BBQ rub liberally to both sides of the ribs.
STEP 3: Smoke the Ribs: Place the ribs in the smoker and smoke until the internal temperature reaches 165˚F, spritzing with a mixture of apple cider vinegar and water (1:1) every hour.
STEP 4: Prepare the Roasting Pan: Into a roasting pan, add 2 cups of beef broth, sliced onions, and smashed garlic cloves. Place the smoked beef ribs onto a wire rack in the pan and cover tightly with foil.
STEP 5: Continue Smoking: Return the pan to the smoker and continue smoking until the internal temperature of the ribs hits 205˚F. Ensure the ribs are “probe tender”.
STEP 6: Rest the Ribs: Remove the ribs from the roasting pan and wrap them in butcher paper. Rest the wrapped ribs in a towel in a cooler for 2 hours.
STEP 7: Serve: Slice the ribs and enjoy the smoky, tender, and flavour-packed beef short ribs!
