Scallops with a Green Chile Sauce
GREEN CHILE SAUCE
Ingredients:
- 3 Long Anaheim Peppers (jalapeno will do, not so hot)
- 3 Green Onion
- 1/4 cup Mayo
- 1 tsp. Lime Juice
- 1/4 cup fresh Cilantro
- 1 Garlic Clove
- 1/4 cup Sour Cream
- Zest from a Lime
- Pinch of Sea Salt
SCALLOPS
Ingredients:
- 24 Large Scallops (1.5 oz each)
- Juice of 1 lime
- Zest from 1 Lime
- 1/3 cup Barbecues Galore Rub (Cajun style)
- 2 Tbsp Black Pepper
- 2 Tbsp Hungarian Paprika
- 1 Tbsp Dry Mustard Powder
- 2 Tbsp Spanish Chili Powder
- 2 Tbsp Onion Powder
- Tbsp Garlic Powder
- 1 Tbsp Allspice
- 2 Tbsp Sea Salt
- 20 Tbsp Brown Sugar (yep, lotsa sugar)
- 1 Tbsp White Pepper
- 2 Tbsp Cheyenne Pepper
- 2 Tbsp Thyme dried
- 2 Tbsp Oregano dried
Blacken peppers on BBQ.
Place in bowl, cover with plastic wrap, sweat off skins.
Remove skins and seeds, chop fine.
Chop very fine green onions, cilantro and garlic, combine with peppers.
Mix together with remaining ingredients. Your favorite hot sauce may be added to increase heat!
Wash Scallops, pat dry with cloth. Place in bowl, drizzle olive oil to lightly coat. Add lime juice and zest, mix. Add rub to lightly coat. Place on HOT BBQ, turning once. Should be 4 to 6 minutes total cooking time. Can check one by cutting open, should be opaque in the middle.
Top with sauce.
