Mexican-Inspired Huevos Rancheros Recipe

Mexican-Inspired Huevos Rancheros Recipe

Serves: 4  | Prep. Time: 30 minutes  |

Ingredients:

  • 8 x Eggs
  • 8 x Corn Tortillas
  • 1 x Cup of Favourite Salsa
  • 4 x Tablespoons of Extra Virgin Olive Oil
  • 1 x pound of Ground Chorizo Sausage
  • Optional Garnishes:
  • Queso Fresco Cheese
  • Crumbled Cotija Cheese
  • Crumbled Feta
  • Sliced Avocado
  • Finely Chopped White Onion
  • Cilantro
  • Hot Sauce

 

Directions:

STEP 1: Get your griddle to a two-zone system: one medium-low side, and one medium side and add the olive oil.

STEP 2: Add your chorizo to the medium side of griddle and cook until temperature is 160° F, move to a heat resistant bowl or pan, and keep in the low zone. 

STEP 3: Add the tortillas to the medium side of the griddle.

STEP 4: Spread the Smoky and Cheesy Refried Beans over the toasted top of the tortillas, then add cheese and some of the chorizo, cook it until the cheese starts to melt.

STEP 5: Move the tortillas over to the medium low side when cheese is starting to melt (watch so that your bottom of tortillas do not burn).

STEP 6: Fry four eggs on the medium side of the griddle. The eggs are traditionally fried with the sunny side up, however, you may cook to your liking.

STEP 7: Top your Huevos Rancheros avoiding the egg yolk, add your salsa, Fiesta Fresh Pico de Gallo, and the optional garnishes. We recommend white onion, avocado, and any other cheeses.

STEP 8: If you have leftover Smoky and Cheesy Refried Beans or Fiesta Fresh Pico de Gallo, you may serve with tortilla chips later for a delicious healthy snack.
