Recipe of The Month: Cluck & Squeal Salmon Packets

 

CLUCK & SQUEAL SALMON PACKETS | SERVES 4
Sure, these salmon packets are delicious, but that’s not the best part. The best part is that each portion of salmon and veggies is pre-portioned and cooked in foil, so you don’t have to do any dishes. That’s right. This meal comes with virtually zero cleaning (aside from a cutting board and a knife – let’s not be crazy. So pour yourself a drink, throw together this meal, and enjoy the fruits (er… fish) of your labour.  

INGREDIENTS:

  • Oil of your choice (olive, grapeseed)
  • 4 salmon filets
  • Cluck & Squeal All-Purpose Seasoning
  • 1 small zucchini
  • 1 small yellow summer squash
  • 1 red bell pepper
  • 2 big handfuls of fresh green beans
  • 2 lemons

INSTRUCTIONS:

STEP 1: Assemble your ingredients. Please note the green beans are missing from the photograph. They didn’t want to take from the beauty of the salmon filets. So considerate, those beans. Also, now would be a good time to preheat your grill to medium.

STEP 2: Cut the pepper into 1” bits. Snip the ends off the beans. Slice the zucchini, yellow squash, and lemon.

   

STEP 3: Cut out four large pieces of aluminum foil and pour about a teaspoon of oil in the centre of each. Use a silicone brush to spread the oil out a bit, and then place the salmon filets on each piece of foil, skin side down.

 

STEP 4: Season the salmon generously with the Cluck & Squeal seasoning. Top with the lemon slices.

 

STEP 5: Now, divvy up those veggies and place them on top and around the salmon.

 

STEP 6: Take that gorgeous Cluck & Squeal seasoning and sprinkle it generously over top of the veg.

 

STEP 7: Fold the foil over the salmon and veggies so you have four nice little packages. Cut four more pieces of foil and wrap them around the packages; you don’t want to have juices flying out of there all willy-nilly!

 

STEP 8: Place the packages on the preheated grill, cover, and cook for about 15-20 minutes (15 if your fillets are on the smaller side, 20 if they’re bigger).

 

STEP 9: Unwrap the packets (careful! Steam!) and serve as is!

 

STEP 10: Or, if you’re feeling fancy, use a plate. Enjoy!
