Great Korean-inspired flavour, that is balanced with a nice light spicy tingle (that is not offensive). Blueberry compote is a surprising pop that infuses this all together.
YIELD: A LOT, 40-50 Bowls
INGREDIENTS:
- 4 lb / 2kg boneless, skinless chicken thighs, cut into quarters
Korean Chicken Marinade
- 1 cup Dr Pepper soda pop
- 3 tablespoons soy sauce
- 2 tablespoon Kosmos Hot Dirty Bird
- 1 tablespoon garlic powder
- 2 teaspoons Taekyung Red pepper powder (coarse)
- ½ teaspoon powdered ginger (or 1 teaspoon fresh minced ginger)
- Kosmos SPG or Garlic Jalapeno spice rub (optional)
- Kosmos Hot Dirty Bird spice rub
- Kosmos OPX sauce
- White rice
- Romaine Lettuce – shredded/ sliced thin
- 2 cups of frozen blueberries reduced with ¼ teaspoon vanilla & ½ teaspoon of corn starch in a pot until thick
- Garnish: Fried onions, sesame seeds, green onion chives (sliced crosswise thin)
DIRECTIONS:
Marinate Chicken
- Mix the marinade in a large container.
- Marinate chicken for at least 1 hour or overnight
Grill Chicken
- Warm up the Yoder Flat Top Grill with 1 charcoal chimney and spread additional chimney at the back of the pit). Push charcoal in a line along the back of the pit
- Lay chicken thighs indirect to charcoal about middle of the pit. Immediately, season heavy with Kosmos SPG (or Kosmos Garlic Jalapeno) and Kosmos Hot Dirty Bird.
- Grill chicken thighs ~5-7 minutes at ~300F indirect flip and grill 5-7 minutes and until edges of the chicken are caramelized.
- Brush heavy layer of Kosmos OPX Sauce on the grill for 5 minutes for caramelization
- When chicken is grilled to temperature, put chicken into a pan to rest and pour on more OPX sauce to keep it sweet, sticky and spicy.
Bowl Assembly
- In a small bowl, place shredded romaine lettuce, Korean inspired chicken thigh, blueberry sauce, fried onions, sesame seeds and green onion. Enjoy!
