INGREDIENTS:
Oxtail
- 2 lbs (900g) beef oxtail
- 2 tsp (6g) salt
- 1 tsp (3g) black pepper
- 1/2 cup (125ml) apple cider vinegar
- 1/4 cup (60ml) soy sauce
- 1 tbsp (15g) brown sugar
Mango Salsa
- 1 cup (150g) fresh mango, diced
- 1/2 cup (75g) red bell pepper, diced
- 1/2 cup (75g) cucumber, diced
- 1/4 cup (10g) fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Tacos
- Fresh corn tortillas
- 1/2 cup (30g) pickled red onions
- Fresh lime wedges
INSTRUCTIONS:
- Marinate the Oxtail: In a bowl, combine salt, pepper, apple cider vinegar, soy sauce, and brown sugar. Place the oxtail in a resealable bag, pour the marinade over it, and refrigerate for at least 2 hours.
- Smoke the Oxtail on your Traeger Smoker: Preheat your Traeger smoker to 250°F (121°C). Place the oxtail on the grill and smoke for 4-5 hours, until tender and the meat easily pulls away from the bone.
- Mango Salsa: In a small bowl, combine mango, red bell pepper, cucumber, cilantro, and lime juice. Season with salt and pepper to taste.
- Shred and Assemble Tacos: Shred the oxtail meat, warm the tortillas on the grill, then add oxtail, a spoonful of mango salsa, and pickled onions. Serve with lime wedges.
Chef's Notes
- Substitute with brisket if oxtail is unavailable.
- The mango salsa adds a vibrant colour and tropical flavour that pairs beautifully with the smoky oxtail.
