12 Mistakes Pellet Grill Owners Make

Whether you're new to the pellet grill world or have been using one for years, this guide will help you avoid 12 common mistakes that pellet grill owners often make, no matter the brand. Plus, I have three bonus tips to improve your pellet grilling experience.

Mistake 01 – Not Preheating Long Enough

Preheat your pellet grill for 20-30 minutes to stabilize temperatures. This ensures even cooking and better results.

Mistake 02 – Neglecting Temperature Probe Cleaning

Keep your temperature probe clean for accurate readings. Residue from cooking can throw off temperature readings and affect cooking times.

Mistake 03 – Ignoring the Firebox

Regularly clean out the firebox to prevent ash buildup, which can interfere with proper ignition and create flame outs. I empty mine before every cook.

Mistake 04 – Using Low-Quality Pellets

The quality of pellets matter for consistent heat and flavour. Avoid inferior pellets to ensure optimal performance and avoid a bitter taste. My recommendation is Bear Mountain BBQ Pellets.

Mistake 05 – Neglecting Pellet Storage

Keep pellets dry to prevent them from becoming mushy and clogging the pellet grill's auger. Store them in a sealed container or tightly wrapped in a dry place.

Mistake 06 – Not Following Manufacturer's Recommendations

If your manufacturer recommends starting your pellet grill with the lid open, start your pellet grill with the lid open to avoid potential pellet explosions during ignition. Follow the manufacturer's instructions for safe operation. Not all manufacturers recommend this, but some do.

Mistake 07 – Cooking at Too High Temperatures

Pellet grills produce less smoke at higher temperatures. Stay under 275°F to allow more smoke to infuse into the meat for better flavour. Ideal temps are 225°F -250°F.

Mistake 08 – Cooking Based on Time, Not Temperature

Learn to cook based on internal temperature and feel, not a set cooking time. Use temperature probes to ensure your meat is cooked to the correct internal temperature. Use your instant-read thermometer to feel the tenderness. Properly cooked BBQ will feel like warm peanut butter.

Mistake 09 – Worrying About Temperature Swings

Temperature swings are common with pellet grills. Any grill that doesn’t show a temperature swing is lying. There is a live fire and temperatures are going to go up and down as pellets are added. Don't obsess over the current temperature; focus on the end result. Your home oven swings 50 degrees and you never notice it.

Mistake 10 – Chasing Temperatures

Avoid constantly adjusting the temperature settings. Pellet grills are designed to maintain stable temperatures; let the controller do its job. Set your temperature and forget it. Focus on keeping the meat moist and the look and feel of the final product.

Mistake 11 – Use the Top Rack if you Have One

The top rack is the best because you are away from the direct heat source and heat rises. The top rack will put your meat in the smokiest part of the pellet grill. If you don’t have one consider raising the meat to maximize smoke potential.

Mistake 12 – Neglecting to Keep the Grill Clean

Clean your pellet grill regularly, including the grease bucket and diffuser, to prevent grease buildup and potential fire hazards.
