Pork Tenderloin with Grilled Apples & Onions Recipe

Pork and apples are a no-brainer combination. Rather than the usual pork and applesauce pairing, we’re cooking up some fresh fruit and onions alongside pork loin on the grill for a kick-ass fall meal.

To make it extra autumn-like, we suggest serving it on a bed of leaves, next to a cornucopia, while wearing a luxurious plaid scarf. Extra points if you have a lumberjack-esque beard.

Ingredients:

1 pork loin roast, 1-2 pounds

1 tablespoon grape seed oil

1 medium yellow onion, halved and sliced

2 granny smith apples, cored and sliced into wedges

¼ teaspoon ground cinnamon

Salt and pepper

 

Instructions:

Step 1: Assemble your ingredients and preheat the grill to medium-high heat.

Step 2: Heat the oil in a pan over high heat, score the top of the roast with a sharp knife, and season it generously with salt and pepper. Place the roast in the pan and cook for a couple minutes. Flip and cook the top until it’s crisp and golden brown (searing the meat before grilling it will help it stay moist by sealing in the juices).

Step 3: Add the sliced onions to the pan that the pork was in, and cook for a minute or two – just until fragrant and slightly soft.

Step 4: Place the pork, onions, apples on aluminum foil (including the remaining juice and oil from pan), season generously with salt and pepper, and sprinkle with cinnamon. At this point, it should look like a delicious mountain of food.

Step 5: Wrap up the pork, onions, and apples, and then wrap it up again in another layer of foil. Place it on the preheated grill.

Step 6: Cook the roast for about 30 minutes, or until the apples have broken down and the pork is no longer pink on the inside.

Step 7: Transfer all contents of the foil to a serving dish, season with salt and pepper, if necessary, and then slice ‘er up and enjoy!
