There are few things better in life than meat on a stick, and this baaaad-boy* is no exception. Plus, it’s super easy, so it makes for a great last-minute dinner option. (*Lamb jokes optional.)
Grilled Lamb Kofta Skewers
Serves 4
Ingredients:
¼ white onion, finely chopped
2 garlic cloves, finely chopped
2 tablespoons fresh, chopped dill, plus more, to serve
1 teaspoon mild paprika
1 teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon each salt and pepper
1 ½ pounds ground lamb
Pita bread and tzatziki sauce, to serve
EQUIPMENT REQUIRED:
- Metal Skewers
- Chef's Knife
- Cutting Board
- Large Bowl
Instructions:
Assemble your ingredients. Preheat grill to medium-high, and then clean, and grease the grate. Place the onion, garlic, 2 tablespoons of dill, paprika, cumin, cinnamon, and salt and pepper in a large bowl.
Add the lamb and, using your hands, mix all of the ingredients together. Divide the mixture into four equal portions. Divide each portion into four, creating small balls of meat. Thread the meat onto your skewers, squeezing firmly to ensure the meat is secure.
Place the meat skewers on the preheated grill and cook for about 15 minutes, rotating a few times as they cook.
Remove skewers from grill, top with remaining dill, and serve with pita bread and tzatziki, if desired.
