It's peach season! That means that beautiful, juicy fruits of the stone fruit Gods are in abundance across the country. These tasty little gems are so special that they even have festivals dedicated to them!
I know what you're thinking, "why would I heat up the house baking cobbler?", and that's exactly why we're taking this recipe outside. Perfect to make while entertaining at your next barbecue, this cobbler can bake on the barbecue while you and your guests eat dinner.
Peach Cobbler is a classic dessert. It’s best known for being enjoyed in the Southern US, on wrap-around porches, by southern belles while sipping sweet tea. Here in Canada, we grill our cobbler, enjoy it in igloos, and wash it down with an ice-cold beer. It’s amazing how different we are, culturally, eh?
Barbecue Baked Peach Cobbler Recipe
Ingredients
FILLING
4 cups peeled, sliced peaches (thawed, if frozen)
¼ cup brown sugar
1 tablespoon all purpose flour
Juice of ½ a lemon
1 teaspoon lemon zest
1 teaspoon vanilla extract
BISCUIT TOPPING
1 ¼ cup all purpose flour
¼ cup brown sugar
2 teaspoons baking powder
½ cup buttermilk
¼ cup butter, melted
1 teaspoon vanilla extract
¼ teaspoon almond extract

Instructions
Step 1: Assemble your ingredients and preheat the grill to medium-high.
Step 2: In a medium bowl, mix all filling ingredients.
Step 3: In another bowl, whisk flour, sugar, and baking powder.
Step 4: In yet another bowl (don’t worry, you have a dishwasher. You’re fine.), whisk buttermilk, melted butter, and extracts.
Step 5: Add the wet ingredients from Step 4 to the dry ingredients from Step 3. Mix to combine and set aside.
Step 6: Grease a cast-iron skillet, and pour the filling in. Spread it out so it’ll cook evenly.
Step 7: Spoon the dough over the filling, cover the pan with aluminum foil, and place on the preheated grill.
Step 8: Cook the cobbler for about 25-30 minutes, or until the filling is bubbling and the biscuit topping is golden brown. Serve with a scoop of ice cream, if desired (if desired. Who are we kidding? Who’d be like, “No, no ice cream for me.” If that person exists, we don’t want to know about him because he’s obviously a monster.
