Spanish-Style Pork Kebabs Recipe
Serves: 6-8 | Prep. Time: 15 mins. | Marinating Time: 4-8 hrs. | Grill Time: 8-10 mins.
Ingredients:
- 8 grams finely chopped fresh Italian parsley leaves and tender stems
- 60 millilitres extra-virgin olive oil
- 2 tablespoons minced red onion
- 1 tablespoon sherry vinegar
- 1 tablespoon smoked paprika
- 2 teaspoons ground cumin
- 2 teaspoons minced garlic
- ¼ teaspoon ground cayenne pepper
- Kosher salt
- 2 pork tenderloins, each about 450 grams, trimmed of silver skin and any excess fat, cut into 3 centimetre cubes
- 2 large bell peppers, 1 red and 1 green, cut into 3-centimetre squares
Directions:
STEP 1: Mix together the marinade ingredients, adding ½ teaspoon of salt. Place the pork cubes in a large sealable plastic bag and pour in the marinade. Remove any excess air from the bag, seal it tightly, and refrigerate for 4 to 8 hours, turning occasionally.
STEP 2: Soak your Panda Toothpicks in water for at least 30 minutes before grilling your kebabs.
STEP 3: Prepare the grill for direct cooking over high heat 445°F (230°C).
STEP 4: Once you've successfully tested your patience and waited at least 4 hours for the pork to marinate, take the pork out of the bag and discard the marinade.
STEP 5: Next, thread the pork cubes and bell pepper squares onto the skewers. First the pork, then the pepper, then the pork, then... you get the idea.
STEP 6: Clean the cooking grates and brush them with oil, or use the Mr. Mister spray bottle to get a nice even coat across it.
STEP 7: Grill the skewers over direct high heat with the lid closed to keep the environment as moist as possible. Cook one side for about 4 minutes, check to see if it's at least half-way cooked through. If it is, flip the skewer to the other side to let it cook for another 4 minutes or so.
STEP 8: Once the internal temperature of the pork hits at least 145°F (62.78°C), it's done. Remove from the grill and season with salt before serving hot.
