Canada Day Smoked Bread Pudding Recipe

Get ready to indulge in a dessert that will get you singing Oh Canada. Our original recipe of this smokin' sweet delight is a divine combination of white chocolate, caramel, and cinnamon.

Light up your smoker and let's get started. 

 

Main Ingredients:

  • 2 Tbsp Butter (room temp)
  • 1 Loaf French Bread, (day old, or stale) cut into 1” cubes
  • ½ Cup White chocolate Chips
  • ¼ Cup Caramel Chips
  • ¼ Dried Cranberries
  • 1 Tbsp Cinnamon

 

Custard Ingredients:

  • 1 Cup Whole Milk
  • 2 Eggs
  • ¼ Cup Sugar
  • 1 Tbsp Bourbon
  • Pinch of Salt

 

Caramel Sauce Ingredients:

  • 1 x 13oz can Dulce De Leche
  • ½ Cup Butter
  • ¼ Cup Bourbon

Custard Directions:

STEP 1: Combine all ingredients in a blender and mix them up until they're well combined. 

STEP 2: When it's mixed well, pour it over your cubed bread that has been layered into a tin pan and let it rest for at least 30 minutes - giving the bread time to soak up the custard - but don't let it sit for more than 24 hours.

 

Main Directions:

STEP 1: Pre-heat your smoker to 350°F, creating the perfect smokin' environment. We're using the Yoder Smokers YS640s Competition Cart.

STEP 2: Coat a large 12" cast iron skillet with 2 Tbsp. of butter and place the cubed bread in a single layer.

 

STEP 3: Top with half of the white chocolate and caramel chips.

 

STEP 4: You've heard of Salt Bae, well, top this with half of the cinnamon with all the jazz you can muster - make it spicy.

STEP 5: Carefully repeat STEP 3 and STEP 4, using up the rest of your cinnamon, white chocolate and caramel chips. 

STEP 6: Place that delicious skillet on a smoker and cover it with a lid. If your skillet doesn't have a lid, using tin foil works too. 

 

STEP 7: Bake at  350°F for 25 minutes.

STEP 8: Uncover and turn up the smoker to 400°F and bake that delicious skillet of sugary goodness until it's lightly browned. This may take up to 30 minutes.

    STEP 9: While the bread pudding is cooking, prepare the caramel sauce (directions below).

    STEP 10: Last but not least, when the bread pudding is done smoking, top it off with drizzled caramel sauce before serving. Be warned: try not to stand directly above the Canada Day Smoked Bread Pudding, you may be drooling. 

     

     

    Caramel Sauce Directions:

    STEP 1: Combine Dulce De Leche and butter in a sauce pan on medium-low heat.

    STEP 2: Bring the mix to a simmer for 1 minute and be sure to whisk it constantly.

    STEP 3: Remove from heat and add your bourbon.

    STEP 4: Return to heat and reduce the alcohol for another minute or so.

    STEP 5: Once it's cooled, pour it over your Canada Day Smoked Bread Pudding.
