Charcoal Smoked Shrimp Ingredients:
- 16 Shrimp (Large, peeled and deveined)
- 2oz JRRR BBQ Caesar Premix
- Hardcore Carnivore Red
Potato Salad Ingredients:
- 2lb Red Potatoes (skin on)
- 3 Eggs hard boiled
- ½ Cup Onion finely chopped
- 1 ½ Cups mayonnaise
- 1 ½ Tbsp. House of Q Slow Smoked Gold Mustard by House of Q.
- Small sprinkle of salt and pepper (no more than 1/4 teaspoon each or use ½ tsp Kosmos Q SPG
- ½ tsp Celery Seed
- ¼ tsp Ground Mustard
- ½ tsp Fresh dill
- 3 Slices bacon cooked to crisp and crumbled OR 3 tablespoons of real bacon bits (crisped in the microwave or frying pan before adding)
Bourbon Carrots Ingredients:
- 4 Tbsp unsalted butter (divided)
- 2lbs Carrots, peeled and sliced on a diagonal into 1/2-inch-thick discs
- ½ Cup Bourbon
- ½ Cup Brown Sugar
- ½ tsp. Cattleman's Grill Trail Dust - All Purpose Seasoning.
- Coarsely chopped fresh parsley leaves, for serving (optional)
Shrimp Directions:
STEP 1: If you're smoking up your tenderloin from our Reverse-Seared Smoked Tenderloin recipe, it's the perfect time to get the shrimp ready for the grill. Grab a bowl and place your de-shelled shrimp in, add JRRR Caesar premix and mix it all up well. Then add Hardcore Carnivore Red and let it all marinate for 30 minutes.
STEP 2: Next, thread your shrimp onto your skewers.
STEP 3: Now for the fun part: on your charcoal or gas grill, cook the shrimp until they char. Remember to flip the skewer so they cook evenly and both sides get charred. Make sure the internal temperature hits 140°F.
DILL-icious Potato Salad Directions:
STEP 1: To start, grab a large pot and fill it with water, then bring it to a boil.
STEP 2: Dice the potatoes into quarters, leaving the skins on for that rustic charm.
STEP 3: While the potatoes are simmering away, you can toss the eggs into hard boil them, which should take about 10 minutes.
STEP 4: Finely chop the onion into a large bowl.
STEP 5: When the potatoes are tender, drain them into a colander and then let them cool down to room temperature.
STEP 6: Dice and chop the cooled potatoes into a mixture of big and small chunks to have variance in texture with every satisfying bite later on.
STEP 7: After the eggs have also cooled down, peel and dice the hard boiled eggs, then add them to the bowl of chopped onions. Fold in the mayonnaise, dill, salt and pepper, ground mustard and the Slow Smoked Gold Mustard by House of Q.
STEP 8: At this stage, you can add bacon bits if you prefer to. To optimize their flavour, put them in a pan at medium heat and crisp them up.
You can also put the bacon bits in a small bowl and cover it with a towel, then microwave them for just 10 seconds so they become crisp ad flavourful.
STEP 9: Thoroughly blend the potato salad while you give it a good stir. Allowing some of the potatoes to be mashed, while others remain diced. Then taste and add salt to your taste.
STEP 10: Refrigerate for at least 1-2 hours before serving. Before serving, you can add extra chopped dill, salt, or bacon if you'd like.
Bourbon Carrots Directions:
STEP 1: Preheat your grill to 375°F.
STEP 2: Now, place your cast-iron skillet on the grill and melt 2 Tbsps. of butter.
STEP 3: Add your carrots and stir them occasionally for about 5 minutes while they cook. When they soften up a bit, transfer them to a plate to set aside.
STEP 4: Add the bourbon into the skillet and cook for about 30 seconds - your goal here is to reduce the alcohol.
STEP 5: Now stir in the remaining 2 Tbsps. of butter and add in brown sugar and Cattleman's Grill Trail Dust - All Purpose Seasoning.
STEP 6: Bring that aromatic mix to a boil and let it bubble until it begins to thicken into a glaze. This should take approximately 2-3 minutes.
STEP 7: Add carrots you set aside before and stir them around to coat them in the delicious bourbon glaze you just made. Continue cooking them until the carrots are tender and the glaze is has become a thick coat around the carrots.
STEP 8: Transfer the Bourbon Carrots from the skillet to a plate, and serve immediately for the best taste.
