Well, friend, although you're right about it being easy, there's an infinite amount of ways to make them. So, we want to show you this tried and triumphunt version that we're sure you love. Char-Grilled Stuffed Peppers Recipe
Serves: 6 | Prep. Time: 5 mins. | Grill Time: 45 mins.
Ingredients:
- 1 1\2 lbs Ground beef or pork
- 4 peppers (orange, green, yellow and red)
- 2 onions
- 1 green pepper
- 1 or 2 handful of spinach
- 3\4 cup frozen corn
- 1 can (796ml) crushed tomato
- 1 can (540ml) of black beans
- 1\2 cup of ketchup
- 1\2 tsp of sweet smoked paprika
- 1\4 cup of maple syrup or molasse
- Graded cheese
- Salt & pepper
Directions:
STEP 1: Preheat your Big Green Egg to 350°F with your favourite charcoal. You could also use your stove top or oven too, but that'd be no fun.
STEP 2: In a cast iron pan, brown the meat and onions. Then, add the green pepper and frozen corn, allowing it to cook for approximately 2 minutes.
STEP 3: Next, incorporate crushed tomato, ketchup, maple syrup or molasses, smoked paprika, rinsed black beans, and spinach into the mixture.
STEP 4: Let the mixture cook for roughly 30 minutes until it reaches a thick consistency suitable for filling the peppers.
STEP 5: Slice the 4 peppers in half and fill them with the prepared mixture.
STEP 6: Arrange all the stuffed peppers on the EGGspander and cook for around 15 minutes or until the bottom of the peppers begins to roast.
