Chopped Cheese Calzone Recipe
Serves: 4-8 | Prep. and Rest Time: 24 Hrs | Cook Time: 10-12 min.
Ingredients for Chopped Cheese Calzone Recipe:
- 3 Best quality beef patties 225g/8 Oz
- Dough balls x 3 (Dough recipe can be found here)
- Flour
- Spice mix (few pinches of whatever spices you like)
- Sea salt
- White pepper
- Worcestershire sauce
- 100ml / 3.5 fl Oz Beef stock
- 100g / 3.5 Oz Gruyere
- 100g / 3.5 Oz Sharp cheddar
- 100g Mozzarella / Provolone
- 1 Large green pepper
- 1 Can of quality tomato sauce
- 9 American cheese slices
- 1 Large white onion
- Burger sauce (homemade or shop bought)
- Diced pickles
- Your favorite hot sauce (consider using Fury Hot Sauce)
Directions for Chopped Cheese Calzone Recipe:
STEP 1: Heat the Gozney Dome to 400°C/750°F.
STEP 2: Place peppers in a cast-iron pan and char them in the Dome until slightly blackened. Remove from the Dome and let them cool.
STEP 3: Cook beef mince patties in the same cast-iron until almost done. Chop them up and add spices. Return to the Dome to caramelize.
STEP 4: Grate or slice cheeses. Remove beef from the Dome and deglaze the pan with a bit of beef stock and Worcestershire sauce.
STEP 5: Chop cooled peppers and add to the beef along with cheeses. Return to the Dome to melt cheese.
STEP 6: Transfer mixture to a bowl to cool.
STEP 7: Roll out dough and spread with tomato sauce. Add cheese mixture and top with cheese singles.
STEP 8: Fold dough over filling and seal edges. Poke holes in the top. Transfer to the oven at 380°C/720°F.
STEP 9: Bake until golden brown, then serve with onion slices, pickles, burger sauce, and hot sauce. Enjoy!
