Mexican Grilled Beef Ribs Recipe
Serves: 2-4 | Prep. Time: 1 hour
Ingredients:
- 10-12 pieces of Flank Cut Beef Short Ribs
- 3 tbsp Maggi Seasoning
- 2 tbsp Worcestershire Sauce
- 1 Lime (zested and juiced)
- 2 Cloves of Garlic (minced)
- 1 tsp Fresh Pepper
- 1 tsp Sugar
Serve With:
- Tortillas
- White Onion
- Cilantro
- Limes
- Grilled Spring Onions
- Rice and Beans
Directions:
STEP 1: In a bowl, combine: Maggi seasoning, Worcestershire sauce, lime zest and juice, minced garlic, pepper, and sugar to create the marinade.
STEP 2: Place the beef ribs in a double-seal plastic bag, ensuring they are not touching each other. Pour 3/4 of the marinade over the ribs, seal the bag, and remove all the air. Let it marinate for at least 1 hour (or overnight for maximum flavour, just make sure to use half the lime juice for overnight marinating).
STEP 3: Remove the ribs from the bag and pat excess marinade off of each piece.
STEP 4: Preheat your Broil King grill on high over 2 burners. Once the grill is scorching hot, place the ribs and spring onions on it. Grill for 2-3 minutes on each side to get a good sear and char. Check the internal temperature of the ribs, aiming for roughly 130°F internal temperature.
STEP 5: Baste the ribs with the excess marinade for extra flavour and char.
STEP 6: Once cooked to your liking, remove the ribs and onions from the grill and let them rest for a couple of minutes.
STEP 7: Serve the ribs with your choice of accompaniments, such as salad, rice and beans, or as tacos with white onion, cilantro, grilled spring onion, and lime wedges.
