Part 3 Of the Complete Christmas Dinner: Cherry Bourbon Smash Cocktail and Blackberry Bourbon Streusel

For the holidays this month, we're going to show you four simple recipes that will add a ton of flavour to your table! There's several recipes so we're going to have to break this one down in parts.

Drink: Smoked Cherry Bourbon Smash Cocktail

Get ready to be introduced to your new favourite Christmas cocktail (also works great for birthdays... and Mondays)

Smoked Cherry Bourbon

Ingredients:

  • 30 Frozen or Fresh Cherries (Pitted)
  • 4 Tbsp. Bourbon
  • 2 Tbsp. Brown Sugar
  • Bitters (to taste)
  • Lime for Wedges
  • Ice

Directions:

STEP 1: Set your smoker to 425°F.

STEP 2: While the smoker is heating up, put the cherries, bourbon, and brown sugar in a large bowl and toss them.

STEP 3: Place the mixture into a cast iron pan, or any barbecue-safe pan, and roast for 10 minutes (or until the cherries have darkened in colour and have softened).

 

STEP 4: Remove that aroma-filled pan of deliciousness off the grill and allow it to cool completely. 

STEP 5: Muddle a few of the smoked cherries with the bitters and a lime wedge. 

 

STEP 6: Add your ice, bourbon, and cola.

 

STEP 7: Garnish it with a lime wedge and enjoy!

Smoked Chery Bourbon Smash Cocktail

 

 

 

Dessert: Smoked Blackberry Streusel

Alright, so you've had your drink. It goes without saying, you'll need a smoked dessert too.  

 

 

Ingredients:

  • 24 oz. Blackberries
  • 1 Lemon (for zest and juice)
  • 2 Tbsp. Bourbon
  • 2 Tsp. allspice
  • 1/4 Cup of White Sugar
  • 1 Cup of Flour
  • 1/2 Tsp. Baking Powder
  • 1/2 Cup of Softened Butter (plus extra to grease your pan)
  • 3/4 Cup of Brown Sugar
  • 1/2 Tsp. Cinnamon
  • Pinch of Salt

Directions:

STEP 1: Set your smoker to 375°F.

STEP 2: In a large bowl, combine frozen berries, lemon zest, lemon juice, bourbon, allspice, and sugar, and start stirrin'!

 

STEP 3: To make the streusel, mix in butter and brown sugar with your hand or mixer and make sure it’s well combined and fluffy. Don't forget to wear your gloves!

 

STEP 4: Add flour, salt and cinnamon and mix again until just combined. Mixture should be crumbly.

 

STEP 5: Use remaining butter to grease a 10-12″ skillet or baking dish.

STEP 6: Pour the blackberry mixture into the pan then scatter the streusel on top.

 

STEP 7: Place the pan into the grill, and bake for 40-45 minutes or until the fruit is bubbling and the streusel has browned slightly.

STEP 8: Serve alone or with a side of vanilla ice cream!
