The beauty in this shrimp dish is that you can have it by itself with a bit of melted butter or cocktail sauce to dip it in, or you can add this to your linguini to really amp it up. Yes, we know that's mixing Spanish and Italian cuisines, but trust us - it works incredibly well.

Shrimp Scampi Recipe
Serves: 4 | Prep. Time: 20 mins. | Grill Time: 10 mins.
Ingredients:
- 500g Shrimp
- 2 Garlic Cloves
- 1 Whole Chilli
- 100mL Olive Oil
- 1 Slice of Lemon
- KB High Tide BBQ Rub
Directions:
STEP 1: Peel the shells off of the prawns, give them a quick rinse to help remove the intestines, and add KB High Tide BBQ Rub to taste.
STEP 2: Peel and slice the garlic cloves to be about 2 mm thin. Feel free to add one or two more sliced garlic cloves if you'd like to.
STEP 3: Give the chili a quick rinse and chili and chop it up width-wise. Remember to remove the seeds if you can't take the heat.
STEP 4: Now, preheat your grill with your griddle on the rack to about 428°F (220°C).
STEP 5: Add a little olive oil and when it is hot, add the garlic slices and the chilli. Quickly mix everything together, then lay the shrimp down.
STEP 6: Let them cook without stirring for about 3 minutes or until you see they're getting cooked through the bottom half, then flip them over to cook the other side.
STEP 7: After they're all cooked, use your spatula to get it all in a bowl or plate, add the juice of one slice of lemon on top, and garnish with chopped cilantro or parsley if you'd like.
