Smoked Chili Con Queso Recipe

Smoked Chili Con Queso Recipe

Serves: 8 | Prep. Time: 60 minutes

Ingredients:

  • 1 x pound of Hot Pork Sausage
  • 1 x 2 lb block of Velveeta Cheese
  • 1 x pound of Smoked Gouda Cheese
  • 10 oz x Diced Tomatoes mixed with Green Chilies
  • 10 oz  x Fire Roasted Diced Tomatoes mixed with Green Chilies
  • 1 x 10 oz Can of Cream of Mushroom Soup
  • 4 x tablespoons of Traeger Coffee Rub or Cattleman's Grill Original Cowboy Coffee Steak Rub
  • 1/2 cup x Chopped Cilantro

Directions:

STEP 1: Heat a medium cast iron skillet over medium heat and fully cook the pork sausage, breaking it into small chunks. Remove the sausage and drain the fat.

STEP 2: When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.

STEP 3: Use a 4 to 5 quart cast iron Dutch oven or another oven-safe dish. Divide the Velveeta block into 5 to 6 large pieces and cut the smoked Gouda into small 1-inch cubes. Add the canned ingredients, including the liquid, to the dish. Add the cooked sausage and Traeger Coffee Rub or Cattleman's Grill Original Cowboy Coffee Steak Rub last.

STEP 4: Smoke the queso for 45 minutes on the Traeger, stirring 3 to 4 times during the cooking process.

STEP 5: Add most of the cilantro during the last 5 minutes of smoking. Sprinkle the remaining cilantro on top before serving.
