Alder Flavour Profile:

If you enjoy smoked salmon, you've tasted the magic of alder smoke. Indigenous to northwestern United States and western Canada, alder is the traditional wood for smoking salmon. Alder produces such a lovely, lightly-flavoured smoke, it is the go-to wood for fish and poultry. It also does wonderful things to pork.
