Valentine's Day Picanha Steak Recipe

Serves: 4 | Prep Time: 30 min. | Grilling Time: 20 to 25 min.

 Brazilian Picanha Steak Over Charcoal

STEP 1: Remove your steak from the fridge and let sit for 40 minutes prior to cooking

STEP 2: Next, fire up your charcoal grill.

STEP 3: Next prepare your steak. Lay the top sirloin cap flat on a cutting board fat-side up. Using a knife, cut the fat layer, without cutting to the meat, in a crisscross pattern, also known as a crosshatch to you fancier folk out there.

STEP 4: Spray with Duck Fat Spray and work into the fat-cap and sides

STEP 5: Generously season with Dark Side of the Grill Mel Toro Beef Rub

STEP 6: Flip over and spray with Duck Fat Spray again and season

STEP 7: Next cut the steak lengthwise into equal pieces

STEP 8: Roll each steak like a jelly-roll and then using a large metal skewer go through bottom to top with how-ever many steaks were cut.

Brazilian Picanha Steak Recipe

STEP 9: Cook the steaks over the charcoal for 20 to 25 mins (turning every 5 to 7 minutes). You are looking for 128°F to 132°F internal temperature for medium rare.

STEP 10: Once temperature has hit (to your liking) pull off the grill and let rest for 5mins.

STEP 11: Slice against the grain and serve with the Steak Oscar-Style Shrimp Béarnaise Sauce on top.
