Char-Grilled Oysters with Bacon–Bourbon–Ginger Butter Recipe

Serves: 4 to 6 people | Prep Time: 10 min. | Grill Time: 3 min.

Ingredients for Char-Grilled Oysters with Bacon-Bourbon-Ginger Butter Recipe:

  • Butter
  • 1 Bacon Slice
  • 115 Grams (1 Stick) Unsalted Butter (Softened)
  • 2 Tbsps. Peeled and Minced Fresh Ginger
  • 1 Tbsps. Bourbon
  • 1 Tsps.Minced Fresh Mint Leaves
  • ¼ Tsps. Kosher Salt
  • 2 Dozen Large, Fresh Oysters

Ingredients for Char-Grilled Oysters with Bacon-Bourbon-Ginger Butter Recipe:

STEP 1: Cook the bacon in a large skillet over medium heat until it's crispy, typically taking around 6 to 8 minutes. Make sure to turn it occasionally. Once done, place the cooked bacon on a paper towel to drain, saving about 1 teaspoon of the fat.

STEP 2: Chop the cooked bacon finely and put it in a bowl along with the reserved teaspoon of rendered fat and the other ingredients for the butter.

STEP 3: Use a fork to vigorously whisk the mixture until it's thoroughly blended.

STEP 4: Spoon the butter mixture onto a sheet of wax paper, positioning it on the edge nearest to you.

STEP 5: Fold the wax paper over the butter mixture, rolling it into a cylinder shape while smoothing it as you go. Seal the ends tightly by twisting them. Let the mixture chill in the refrigerator until it's solid, which typically takes at least 2 hours.

STEP 6: Take the butter mixture out of the refrigerator about 5 minutes before you're ready to grill, and cut it into small chunks, adjusting the size based on the oysters you're using.

STEP 7: Prepare the grill for direct cooking over medium–high heat (200°C to 260°C).

STEP 8: Grip each oyster, flat-side up, in a folded kitchen towel. Find the small opening between the shells near the hinge and pry it open with an oyster knife. Try not to spill the delicious juices, known as the “oyster liquor,” in the bottom shell.

STEP 9: Separate the oyster meat from the top shell, and then carefully loosen the oyster from the bottom shell using the oyster knife.

STEP 10: Remove and discard the top shell, ensuring the oyster and its juices remain in the deeper shell.

STEP 11: Place a chunk of the flavored butter on top of each oyster.

STEP 12: Grill the oysters over direct medium-high heat with the lid closed until the oyster liquor bubbles, the butter melts, and the edges of the oysters just start to curl, which usually takes about 3 to 4 minutes.

STEP 13: Using tongs, transfer the oysters in their shells to a heatproof platter.

STEP 14: Serve immediately.
