BBQ doesn't have to be all about meat. We'll show you that with this mouth-watering Honey-Glazed Salmon Recipe with Lemon Pasta and Garlic Green Beans, grilled with the Yoder Smokers YS640S Competition Cart.

Honey Glaze for Salmon
Ingredients:
- ¼ Cup Butter
- ½ tsp Heath Riles Honey Chipotle Rub
- ½ tsp Heath Riles Cajun Creole Garlic Butter
- ¼ Cup Honey
Directions:
STEP 1: The first step is easy. Combine all the glaze ingredients in pot and mix/stir it well on medium heat.
STEP 2: Remember to stir frequently until those delicious barbecue rubs are dissolved.
STEP 3: Then, put it aside away from the heat to sit and cool.
STEP 4: To reheat it for later, place the pot on-top of your Yoder Pizza oven (or your regular kitchen stove) for a minute or so until the mixture gets thins again.
Wood-Fired Salmon
Ingredients:
- 3 lbs. Salmon Filet (bones removed) or packaged frozen Salmon (defrosted)
- 2 Tbsp. JRRR BBQ Caesar Premix
- 1-2 Lemons, cut into slices (enough to cover the length of your salmon)
- Heath Riles Honey Chipotle Rub
Directions:
STEP 1: Pre-heat your smoker (a gas grill and oven works too) to 350°F. We're using the YS640s Smoker with their Yoder Smokers Wood-Fired Oven attachment.
STEP 2: While that's pre-heating, you can prepare your salmon by cutting off the tail and belly area, so that your get a even and smooth fillet.
STEP 3: Transfer the salmon to the Brander Pan Pal and drizzle JRRR BBQ Caesar Premix over the top and rub it into the salmon.
STEP 4: Heath Riles Honey Chipotle Rub to season it to your taste, then lay lemon slices evenly on top of the salmon.
STEP 5: Place the fish into the oven, preferably the Yoder Smokers Wood-Fired Oven, and cook for 10 minutes.
STEP 6: At the10 minute mark, remove the delicious smelling salmon from the heat, move the lemon aside, then baste it with glaze you made earlier. Then place the lemons back on and put it back into the oven for another 5 minutes or until internal temperature is 125°F (wild fresh caught salmon can be pulled out at the internal temperature of 120°F).
STEP 7: Serve the delicious Honey Salmon however you want. We're going to do it with Lemon Pasta and Garlic Green Beans for this weekends family feast.
Lemon Pasta
Ingredients
- 1 Large Shallot (finely chopped)
- 1 Tbsp. Butter
- 1 Garlic Clove (minced)
- ¼ Cup White Wine
- ½ Tbsp. Heath Riles Cajun Creole Garlic Butter
- ½ tsp Salt
- ½ tsp Pepper
- ½ Cup Heavy Cream
- 1 Lemon (juiced)
- 2 Tbsp. Coarsely Chopped Parsley
- Lemon wedges to serve (optional)
Directions
STEP 1: Add your butter and chopped shallot to your skillet or frying pan. Gently fry the shallot until it's softened.
STEP 2: Add the minced garlic to the pan and stir. Then add Heath Riles Cajun Creole Garlic Butter. Keep stirring and don't let the garlic burn.
STEP 3: Next, add the wine to the pan cook it for about a minute or so.
STEP 4: Stir in the zest of the lemon, then add your lemon juice.
STEP 5: Pour in the heavy cream and heat through.
STEP 6: Add the parsley and season generously with salt and black pepper.
STEP 7: Taste your sauce and add more lemon or salt accordingly.
STEP 8: Add your cooked pasta and ¼ cup of the water you cooked your pasta in. Mix it up over low heat.
STEP 9: Gently toss or mix the pasta until everything is well coated. You can add more water from you cooked pasta if the sauce starts to thicken too much.
STEP 10: Serve with the Honey Salmon on the side, a garnish of parsley, and some lemon wedges.
Bonus Side Recipe: Garlic Green Beans
Ingredients:
- 1 lb. Green Beans
- 1 Tbsp. Garlic (minced)
- 2 Tbsps. Butter
- 1 Tbsp. Japanese BBQ Sauce or ½ tsp Soy Sauce (light)
- ½ tsp Kosmos Q SPG
- ½ tsp Heath Riles Garlic Jalapeno Rub
Directions:
STEP 1: Pre-heat your gas grill to medium heat (325-350°F).
STEP 2: Trim the green beans and put them in a bowl.
STEP 3: In a large skillet, heat butter over medium high heat for 2 minutes until it melts and sizzles.
STEP 4: Add your garlic, Kosmos Q SPG, and Heath Riles Garlic Jalapeno Rub, mix well and sauté for 2 minutes until the garlic turns golden brown.
STEP 5: Pour the butter mixture over the green beans, add the Japanese BBQ sauce or Soy Sauce and mix well. Let that deliciousness sit for 5-10 mins.
STEP 6: Get yourself a Brander T-Topper Grill Topper and place beans on that stainless steel beauty.
STEP 7: Place the pan on grill and cook those string beans until they're lightly charred. This should take roughly 10 minutes of occasional stirring over your heat.
Last but not least, plate everything and watch your family drop their jaws in amazement of the lemony aroma.
