Winter Wonderland Brussel Sprouts Salad Recipe

It's about to get cold quicker than you think here in Canada. Gone are the days of backyard patio drinks (unless you've got a great patio heater). Winter Brussel Sprouts Recipe

Ingredients for Winter Brussel Sprouts:

  • 1½ pounds Brussels Sprouts (shredded)
  • 1 x Honey Crisp Apple (chopped)
  • 3 Tbsps. Shallots (minced)
  • ¼ Cup Extra-Virgin Olive Oil
  • ¼ Cup Vegetable Oil
  • ¼ Cup Apple Cider Vinegar + 2 Tablespoons 
  • 3 Tbsps. Scandia Fields Honey (or regular honey)
  • 1 tsp salt 
  • 1 tsp pepper 
  • 2 Tbsps. Butter
  • 2 Tbsps. Prairie Smoke and Spice Maple Candy 
  • ¾ Cup Walnuts (chopped)
  • ¾ Cup Thinly Sliced and Crumbled Parmigiano-Reggiano

 Christmas Brussel Sprouts Recipe

Directions for Winter Brussel Sprouts:

STEP 1: Melt your butter in a small pan and add your chopped walnuts. Mix until combined and cook until bubbly and the butter starts to brown. 

STEP 2Add your Prairie Smoke and Spice Maple Candy. Combine and cook until the walnuts and butter sauce are deep in colour, remove from heat and let sit. 

STEP 3: In a large bowl, combine the shredded Brussels sprouts, apples, shallots, olive oil, vegetable oil, apple cider vinegar, honey, salt, and pepper. Then, toss well. 

STEP 4: Cover with plastic wrap and refrigerate for at least 30 minutes, but no more than 4 hours.

STEP 5: When ready to serve, toss the walnuts and Parmigiano-Reggiano with the salad.
